Thai Red Curry

Nelson @ home: Kitty's other Asian Home Gourmet packet she had given me was Thai Red Curry. The sauce was really tasty, although it wasn't as spicy as I would have liked it, even though I added extra spice. But the real key to curry is the base of Coconut milk. This ingredient is key, and gives thai food its distinct taste. I used "lite" coconut milk, which made it taste less rich, but it was still very good. I recommend using these sauce packets, as it results in an authentic tasting dish - at home.
