Homemade Mango Chicken
Nelson @ home: I didn't have thai ingredients on hand, so I just made this chinese style, but with the addition of mango. Unfortunately the Mango wasn't ripe, so the Mango was hard and not very sweet. Often at restaurants, they mango is fairly firm and not exteremely sweet, but they made it taste better than I was able to. I tried to cook it longer, but I ended up overcooking the vegetables. I also added the cashews too early in process, I think they are best when they are added last so they remain hard. I learned a lot from trying this, so hopefully next time will be better.
