Steamed Fish

Nelson @ Happy Seafood Restaurant: Here is the obligatory steamed fish, cantonese style. I don't think cooked fish gets any better than this. I'm not sure what fish this is, but it had the head upturned. I'm not sure whether this is because the type of the fish, the cooking method, or something else. Anyone know?
