Instant Pot Chicken

Restaurant: none

dre: A couple weeks ago, whole chickens were on sale at Metro. I wanted to try cooking it in the Instant Pot, so I bought a 2.5 lb chicken for $5. Figured I won't feel so bad messing up the meal.

I seasoned the chicken with salt, pepper, rosemary, oregano and some other spices that I had in my pantry. I put the chicken on the trivet, poured in half cup of water, and then cooked it for 15 minutes. Recipes online consistently say to cook the chicken 6 min/lb. I also stuffed the chicken with onions, garlic and an apple (I read that online so I decided to try).

When it was done, it smelled really good! It tasted good too, but Mike said the white meat was a little dry. Definitely a nice easy meal and I look forward to the next time whole chickens go on sale!

I also re-used the bones and drippings and made broth. I love the ease of re-usability!
