Nelson: Usually BBQ is not my preferred method of cooking steak, but in the summer I make an exception. The BBQ is great at creating the smokey flavour that goes so well with meat. I flip it exactly four times to create a bit of a crisscross pattern, although the bones life the meat from the grill a little in this case so that I don't get those perfect grill marks. Otherwise, I close the lid for most of the cooking time and try not to overcook it. Let it rest, then cut and enjoy!
