A Vegetarian Meal

dre: Our vegetarian friends were coming over for dinner, so I planned that week what to make. I decided on stuffed peppers and a quinoa salad. I've never bought so many vegetables in a week span before. One of the friends has health issues, so he really has to watch what he eats, so I needed to make it as healthy as possible as well.

For the stuffed peppers, I blanched the green peppers by boiling them for about 5 minutes. Blanching helps cook the peppers before I put in already cooked stuffing. What forgot to do, is after taking them out of the pot, to plunge them into ice to stop the cooking.



























These are the peppers before baking them. I cooked broccoli, mushrooms, carrots, onions, tomatoes and basmati rice as the stuffing.

































These are the peppers post baking for about 30 minutes. As you can see, the green pepper is not the raw dark green. I think if I had put them in ice, it would have retained the colour better.

































For the quinoa salad, I used a box of quinoa that came with vegetable seasoning and also added cucumbers, grape tomatoes (chopped in half) and avocados.

I felt very healthy after that meal :)
