Christmas Pork Roast

dre: This year's Christmas dinner with my extended family, I decided to make a pork roast. They were on sale so this giant 8 lb pork loin was about $15. I marinated it with oregano, rosemary, salt and pepper and baked it for less than 2 hours. I thought it would actually take longer, but the meat thermometer beeped under the 2 hour mark. I undercooked it, and let it rest during our drive to Markham.

Fortunately, the pork turned out really juicy! I really appreciated the digital meat thermometer, which I had borrowed, and picked up one for myself for next time!
