Easy Homemade Cheesecake

dre: I had several blocks of cream cheese in my freezer from 2013 (!) and I was afraid of freezer burn. Thankfully, they thawed normally, and weren't chunky. They smelled normal.

I decided to test these out.

I found an easy cheesecake recipe that used only 2 blocks of cream cheese and a pre-made pie crust. I also had a pie crust that was best before early 2014... so I was making an "expired" cake.

The recipe was so easy. I just had to mix the cream cheese with egg, sugar and vanilla and pour into the crust. I baked for about 40 minutes and let it cool for a couple hours in the fridge.

The cheesecake cracked, and looked a little burnt on the top because I used the toaster oven to bake it. Now the taste... it was delicious!! I only let Mike and Kristen eat it and didn't want to risk non-family members in case there were tummy issues. But none of us had any problems and we just wanted to keep eating the cake.

The cheesecake was so easy and so good that I made 2 more for several parties. To prevent the cracking, the second time I baked it in a water bath (water in the tray) in the oven to keep the moisture in. Also, I made some strawberry sauce to cover any cracks.

I was successful with one of the cakes and only a minor crack in the other one!
