Homemade Beef Roast

dre: I attempted to make a beef roast as they were on sale during the Thanksgiving weekend. I bought about 3 pounds of a sirloin tip roast, which I read online that it was one of the better cuts for roasting (rib roast being the best, but more expensive). I rubbed it with salt, pepper, paprika, rosemary, oregano, thyme, and other spices in my cabinet.

I added some potatoes, carrots and celery around the roast and realized that my pan was too small, so after taking this picture, I put some of the vegetables on another pan and drizzled olive oil and spices on them.

I roasted the beef for about an hour and let it stand for 20 minutes. It looked really juicy when we cut into it.

Unfortunately, the beef was pretty tasteless. I don't know if it was because I should have put the spice rub on for a couple hours, or maybe the meat quality itself wasn't the best? Next time, I should make some gravy. I didn't make gravy this time with the drippings because I didn't have time and wasn't organized enough. Next time...

The vegetables were undercooked too. I think that was because they weren't touching the drippings as there was a rack in the baking pan.

On another occasion (not pictured), I attempted a pot roast in the slow cooker and it came out dry... I am no good with beef roasts!
