Mooncake Making, Part 3 - Assembly

dre: Finally, with the dough and lotus paste done, we were ready to assemble! We had a 3-man assembly line going. I flattened the dough, Fred wrapped the lotus paste with the dough, and Denny got the fun job - putting the wrapped lotus paste into a mould and banging it on the table for it to come out.

It took a couple of smushed mooncakes to get the hang out it, but in the end we banged out 47 mini mooncakes!

Flour is important to have around so that the dough doesn't stick to the table of the mould. You can't fill more than one mould at a time, so this also took awhile.
