Edmond & Selina's Wedding Mains
Nelson: Like I said, this was no ordinary wedding. Instead of a sit down meal, there were food stations setup by the Food Dudes around the room and guests would line up to get a portion of the food.
The first is The Smoked Stand, 24 hour smoked brisket on soft brioche with horseradish aioli, crispy onions and homemade BBQ sauce and served with homemade pickles. On the right is the house smoked chicken club with avocado salsa, candied tomato aioli, doubled smoked bacon and baby arugula. They constructed the sandwich by hand on site, so it was neat watching them put it together. As you know, I appreciate freshly put together ingredients. Both were pretty good, but I give a slight edge to the pulled pork for being more flavourful and unique because they added an Indian spice.
Next was the Risotto Stand, lobster risotto garnished with crispy leeks and parmesan shavings. There were huge chunks of lobster in my serving, but the tastes was a little too strong for my liking and risotto a little too hard. Once again I appreciated them making it fresh right on the spot.
The last main was the Pasta Stand, the dudes macaroni and cheese with gruyere, goat cheese, applewood cheddar, truffle parmesan, bread crumbs, fresh chives, tomato concasse. Great presentation and once again the flavours were really powerful. I was pretty full at this point and it was tough to finish such a rich cheesy dish.
One of the most visually impressive desserts to watch them make is Liquid Nitrogen sorbet. They had three flavours, orange, mango and Meyer lemon. Sorbet is not my favourite, but it was definitely fun to eat this dish and even more fun to watch them hand mix the liquid nitrogen with the sorbet ingredients.
Lastly at the end of the night, they had a snack of pulled pork, potato poutine that really hit the spot. I was tempted to eat more than one since it tasted so good, but I was stuffed by this time of the night. Looking back I wish I ate more, but there was so much food!
You may think that is the end, but I left the best part for last!
