Cucumber Pancakes

Nelson @ Home: My sister borrowed an Ina Garten cookbook and decided to make cucumber pancakes. It may sound gross, but it's actually pretty good.

The pancakes looks more greasy than they really were -it was halfway between eggy and pankcakey.
