Buttermilk Story and Other Goodies
dre: I was absolutely craving cornbread, so I looked up a recipe online from allrecipes.com. One of the key ingredients (besides cornmeal) was buttermilk. I had no idea if buttermilk was powdered or sold in a can like evaporated milk. When I asked a worker at the grocery store, he looked at me like I was stupid and said, "In the milk section." Well, I obviously didn't look hard enough in the milk section! Sure enough, it was sold in a carton and the smallest size was 1 litre.
I made the cornbread muffins and it turned out a little bit dry. I will have to make adjustments next time.
After only using half the buttermilk, I decided to make some buttermilk pancakes. I also had some blueberries as well, so I threw them in as well. They were the best pancakes I've ever made as they were so fluffy! With all the buttermilk, I ended up making 8 huge pancakes which lasted us a couple of days worth of breakfasts!
Since I talked about cornbread, I also had a huge package of cornmeal I didn't know what to do with. (I couldn't find cornmeal at Bulk Barn, so I had to buy a package from the grocery store. I must have not looked very hard, because i found it the next time I was at Bulk Barn.) I found another recipe on allrecipes.com for banana walnut cornbread. I turned the bread into muffins and they turned out very nutty and moist and delicious.
Lastly, on the same day I made those banana muffins, since I was already raiding my baking cupboard, I decided to use the last bit of flour and white chocolate chips to make cookies. I made some oatmeal coconut white chocolate chip cookies. Note: I didn't have any eggs at home, so I substituted in milk instead. It made the cookies a little denser, but still pretty good as I prefer soft cookies over harder ones.
P.S. I still have a lot of oatmeal and coconut left over so please send some ideas that doesn't involved cookies on how I can use up these ingredients.
