Bean, Carrot, and Potato Love

dre in Peru: As I was going through my food pictures from the trip, I noticed that this dish of beans, carrots, and potatoes all came up in 3 different tours. The dishes are practically identical, so it makes me believe that (along with the plain white rice) this is something that locals would eat fairly often at home. It's really easy to make as well, and Peru grows a lot of potatoes and beans.
