dre: I wanted to have more variety in my meats, so I decided to have Mike buy some frozen tilapia fillets from Costco. With the eight pieces, I was able to try making 4 different recipes.
The first one was a simple olive and basil rub. I baked it for about 35 minutes, and paired it with some spaghetti with broccoli, corn and cream of mushroom sauce.
The second piece, I breaded it with breadcrumbs, and pan-fried it a little bit to have it stick to the fish. Then i baked the fish and served with salad and garlic bread.
For the third piece, I looked up a recipe to make blackened tilapia. I coated the fish with a lot of spices, namely cayenne pepper, paprika, oregano, garlic powder, thyme, salt and pepper. I pan-fried the fish (much faster than baking!) and also fried the rice with the spices. I served the fish with broccoli, onions and mushrooms. It turned out really spicy!
The last piece, I simply sprinkled with all the spices I had in my drawer, baked it, and served with couscous. This was also spicy as I added cayenne pepper to the fish.
These meals were pretty easy and I felt really healthy too! I think I will venture out to try another type of fish to cook.
